ABTs, or Atomic Buffalo Turds as they are properly called, are the perfect barbecue side.
The jalapeño harvest looks set to be good again this year, and there is plenty of tasty things to make with these little treats.
Stuffed with cheese and sausage and wrapped in bacon that grills beautifully crisp. They are truly ”shut-your-mouth good”.
This is a classic BBQ recipe and not mine originally, but I definitely think you should get to share these treats.
You will need:
- 6–8 large jalapeños
- 1 packet of Philadelphia or another cream cheese
- Grated mature prästost or another full-flavoured cheese
- 1 packet of mini sausages (e.g. chorizo or another kind you like)
- 1 packet of bacon
- Any rub you like
- Cocktail sticks
How to make them:
- Cut the jalapeños in half and remove the seeds
- Fill with cream cheese and sprinkle on a little of the rub
- Sprinkle over some grated prästost
- Press a mini sausage down into the cheese
- Wrap each jalapeño in half a slice of bacon and secure with a cocktail stick
- Set up the grill for indirect heat at about 150 degrees.
- Cook indirectly until the bacon has a nice colour.
- Leave to rest for a short while before serving so the cheese isn’t too hot.
- Eat and enjoy with a really good beer.
